Wash and dry all produce. Preheat oven to 425 degrees. Halve and peel @onion{1}(then thinly slice half and chop the other half). Roughly chop @chives{¼%ounce}.

Cut @sweet potatoes{24%ounce} into wedges. Toss with a drizzle of @olive oil{4%teaspoon} (using some here) on a #baking sheet{}. Season generously with salt and pepper.

In a #medium bowl{}, combine the finely chopped onion, @ground pork{16%ounce}, @panko breadcrumbs{¼%cup}, @sweet and smoky bbq seasoning{1%tablespoon}(use about 2 tsp; we sent more), and @salt{1%teaspoon}(about half). Mix gently until just combined. Form into four 1-1/2-inch meatloaves and place on the baking sheet (with the sweet potatoes). Spread @bbq sauce{4%ounce} over each meatloaf.

Bake on the same sheet with the sweet potatoes until sweet potatoes are browned and meatloaves are cooked through ~{20%minutes}, tossing sweet potatoes halfway.

Heat a drizzle of @olive oil{2%tablespoon} (remaining) in a #large pan{}. In a #small bowl{}, stir @red wine vinegar{2%tablespoon} and @sugar{1%teaspoon} until dissolved. Add sliced onion, @shredded red cabbage{8%ounce}, and @butter{1%tablespoon} to the pan. Season with salt and pepper. Cook until just softened ~{4%minutes}, then stir in the vinegar mixture and cook until beginning to brown ~{3%minutes}, stirring occasionally.

Serve meatloaves with the cabbage and sweet potatoes on the side. Sprinkle the chives over the top.
